Residents of a Tucker subdivision were tired of the same generic grocery store trays for their annual summer gathering. They wanted something authentic, warm, and memorable that would spark conversation and provide a true “taste of home” for the diverse families in the area.
The solution
Three Party Platters, timed to the minute.
Consolata coordinated a massive batch production of three Party Platters—totaling 90 Mandazis, 60 Samosas, and 15 Large Chipettes. Using our dedicated local radius delivery, we timed the frying to finish just 20 minutes before the event start, ensuring the food was steaming upon arrival.
The results
Fifty guests, one standing order.
The order cleared a 45% gross margin while providing enough food for 50+ guests. The feedback was immediate: “The best snacks we've ever had at this event.” The association now has a standing order for their quarterly meetings.
The day itself
Working backwards from the start time.
A gathering of this size is a timing exercise before it is a cooking one. The dough was mixed first, since it needs to rest before it can be shaped, and the Samosas were folded in long batches through the morning so the pastry stayed cold enough to hold its seal. The fryer came on last.
Because the platters were going 10 minutes down the road rather than across the metro, we could hold the frying until the final window and still arrive with everything steaming. The Chipettes were bagged at the door rather than in the kitchen, which is the difference between a crisp that snaps and one that has spent an hour trapped with its own heat.
Everything arrived in one run, laid out in the order the guests would reach for it: Mandazis at the warm end of the table, Samosas beside the dipping sauces, Chipettes in open bags so nobody had to ask. Consolata handed the trays over herself, which is how every large order in the neighborhood is delivered.
